Twice Baked Potatoes


BAHAN :

5 kentang besar ( kl bisa cari yg khusus untuk baking )
1 bawang bombay kecil
180 ml susu cair
2 sdm mentega tawar
1 sdt lada hitam
1 cup ( kurleb 110 gr ) keju cheddar parut
olive oil
sour cream

CARA :
Panaskan oven, 350 F / 175 C. Letakkan kentang di atas pinggan tahan panas. Setelah oven panas, masukkan kentang dan panggang selama 1 jam 20 menit.

Sementara itu, tumis bawang bombay dengan olive oil sampai warnanya agak layu. Angkat dan tiriskan, lalu pindahkan ke mangkuk besar ( untuk mixing ).

Setelah kentang matang, potong memanjang 1/4 bagian atas kentang. Keruk kentang ( tanpa merusak kulitnya) dan letakkan kerukan kentang ke dalam mangkuk mixing dengan bawang bombay tadi. Tambahkan susu, mentega dan lada, aduk dengan mixer. Lalu tambahkan keju dan aduk dengan sendok.

Masukkan campuran kentang ke dalam plastik segitiga, gunting ujungnya, lalu semprotkan di atas masing- masing kulit kentang. Letakkan di atas pinggan tahan panas dan taburkan keju di atas kentang dan panggang lagi selama 20 menit atau sampai keju meleleh, keluarkan. Sajikan dengan sour cream di atas nya.

Lasagna made simple


Bikin Lasagna ternyata gampang- gampang susah, dan setelah browsing sana sini, sepertinya resep ini yang paling gampang dan bahan - bahannya kebetulan ada semua. Setelah berkutat di dapur dan menunggu dengan harap harap cemas, akhirnya jadi juga lasagna-nya dan verdict dari saya...patut di coba!! enak!lezat!

BAHAN :

12 lembar lasagna
500 - 680 gr daging giling
1 Bawang bombay sedang, potong dadu kecil.
2 sdt Bawang putih cincang.
1 sdt basil
1 sdt oregano
1 sdt parsley
1 sdt garam
1 sdt lada hitam
1 butir telur
1 (kurleb 450gr) kaleng saos pasta merah
1 (kurleb 182gr) Kaleng saos tomat
1 (kurleb 455gr )container Ricotta Cheese
340 gr mozarella, potong
60 gr parmesan cheese

CARA :

Didihkan air yang sudah di beri garam secukupnya, masukkan lasagna ke dalam air tsb dan masak selama kurleb 8 - 10 menit.

Sambil menunggu Lasagna matang, tumis bawang bombay, bawang putih, masukkan daging giling dan masak dengan api sedang sampai warnanya berubah kecoklatan.Setelah itu masukkan saos pasta merah, saos tomat, basil, oregano, lada hitam dan garam, aduk dan biarkan mendidih.

Campur ricotta cheese, telur, parsley dan sedikit garam. aduk.

Panaskan oven 375 F/ 190 C.

Siapkan pinggan tahan panas ( khusus untuk oven - ukuran 9 x 13 inch ). Tuang dan ratakan sepertiga campuran daging dan saos ke dasar pinggan, atur 6 lembar lasagna memanjang di atas campuran daging tsb. Tuang setengah dari campuran ricotta cheese , lalu tuang sepertiga mozarella di atasnya. ambil sepertiga lagi campuran daging dan tuang di atas mozarella, lalu tuangkan sepertiga parmesan cheese. ulangi urutan tsb dan akhiri dengan mozarella dan parmesan cheese di bagian paling atas. Tutup pinggan dengan alumunium foil, supaya tidak lengket dengan kejunya, olesi alumunium foil dengan mentega atau cooking spray.

Panggang di dalam oven selama 25 menit. Singkirkan alumunium foil dan panggang lagi ( tanpa alumunium foil ) selama 25 menit. Dinginkan selama 15 menit sebelum di sajikan.


RECIPE IN ENGLISH:


12 Lasagna Noodles
1 1/2 lbs. ground meat
1 medium onion, chopped
2 teaspoons minced garlic
1 teaspoon basil
1 teaspoon oregano
1 teaspoon parsley
1 egg
Salt , to taste
Black pepper, to taste
1 (2 lb. 13 oz.) Jar Pasta Sauce (red)
1 (8 oz.) can tomato Sauce
1 (24 oz.) container Ricotta Cheese
3/4 pound mozarella cheese, sliced
3/4 cup grated parmesan cheese

DIRECTION :

Bring a large pot of lightly salted warter to a boil. cook lasagna noodles in boiling water for about 8 - 10 mins. In the meantime, cook ground beef, onion and garlic over medium heat until well browned. Stir in pasta sauce and tomato sauce. Season with basil,oregano, salt and black pepper. Stir and Simmer.

In a mixing bowl, combine ricotta cheese with egg, parsley and a bit of salt.

Preheat oven to 375 F / 190 C

to assemble, spread about 1 1/2 cups of the meat sauce in the bottom of 9 x 13 inch baking dish. arrange 6 noodles lengthwise over meat sauce. spread with half of the ricotta cheese mixture. top with a third of mozzarella cheese slice. Spoon another third of the meat sauce over mozzarella and sprinkle with 1/4 cups of parmesan cheese. Repeat layers and top with remaining mozarella and parmesan cheese. Cover with foil, to prevent sticking, either spray foil with cooking spray or make sure the foil doesn't touch the cheese.

Bake in preheated oven for 25 mins. Remove foil, and bake an additional 25 mins. Cool for 15 mins before serving.

I got this recipe idea from All Recipes, but of course cooking isn't something you have to follow word for word, so this recipe has been modified to my own taste.

Grilled Salmon Steak with Rosemary Butter


Honestly, I'm a picky eater when it comes to fish, I only like certain fish and/or when it's cooked in certain way. But, I'm also willing to compromise with this recipe :D for my dearest hubby who is on a diet. Yes, this meal is a perfect meal for anyone who's on a diet and I have to admit that this recipe is delicious and easy.

BAHAN :

4 potong salmon ( steak atau fillet )
50gr mentega ( lelehkan )
1 sdm air jeruk lemon
1/2 sdm parsley, cincang
1/4 sdt rosemary, cincang
Garam secukupnya
Lada hitam secukupnya

CARA :

Campur mentega, air jeruk lemon, parsley dan rosemary, aduk rata. Olesi satu sisi salmon dengan setengah bahan campuran mentega tsb, lalu taburi dengan garam dan lada hitam. Panggang di atas Grilling Pan atau Broil di dalam oven, selama 5 menit. Balik salmon dan olesi dengan sisa campuran mentega lalu panggang lagi selama 5 menit.

Tips : Salmon yang sudah matang biasanya berwarna pink dan dagingnya akan luruh ketika di tusuk dengan garpu.

RECIPE IN ENGLISH :

INGREDIENTS :

4 salmon steaks
1/4 cups melted butter
1 tbs lemon juice
1/2 tbs chopped parsley
1/4 tsp rosemary
salt, to taste
black pepper, to taste

DIRECTION :

Combine the butter, lemon juice, parsley and rosemary, mix until blended. Baste top of 4 salmons with half of the butter mixture and sprinkle with salt and pepper. Grill or broil for 5 minutes, then turn and baste with the remaining butter mixture and cook again for another 5 minutes.

You know your salmon is cooked enough when it becomes opaque and If you can separate the flakes with a fork.

CHURROS!!


Dari dulu suka banget sama Spanish dessert ini dan ternyata bikinnya gampang banget. Biasanya Churros ini pakai filling, seperti cream vanilla, strawberry, dll. Tapi kali ini saya nga akan bikin filling nya, cukup churros originalnya aja, nanti begitu disajikan baru di tambah ice cream. Mantap!

BAHAN :
Minyak untuk menggoreng
1/2 cup gula pasir
2 sendok teh bubuk kayu manis
1/2 stick mentega tawar
1 cup air
2 sendok makan gula pasir ( tambahan )
1 cup tepung terigu
1 buah jeruk, parut kulitnya ( yg kita pakai cukup kulitnya)
1/4 sendok teh pala bubuk
4 butir telur
plastic segitiga
cetakan kue semprit.

CARA :

Campurkan 1/2 cup gula pasir dengan 2 sendok teh bubuk kayu manis di atas piring. Sisihkan.

Campur mentega, air dan 2 sendok gula pasir di atas panci, sampai mendidih. Kecilkan api, setelah campuran tersebut mendidih. Lalu tambahkan terigu, parutan kulit jeruk dan bubuk pala, aduk terus sampai adonan mengental dan semuanya menyatu menjadi bulatan besar. Pindahkan adonan ke dalam mangkuk and aduk dengan mixer untuk sedikit mendinginkan adonan, lalu masukkan telor satu persatu sampai adonan menjadi lembut.

Panaskan minyak yg banyak ( untuk deep fry . siapkan plastic kue, potong ujungnya lalu masukkan cetakan kue semprit ke ujung plastic. masukkan adonan ke dalam plastic, setelah minyak panas,tekan plastic agar adonan jatuh di atas minyak panas langsung dan potong sepanjang kurleb 10 cm. Goreng sampai warna adonan berubah kecoklatan,bolak balik. angkat dan tiriskan minyaknya. Lalu gulingkan di atas campuran gula dan bubuk kayu manis.

Sajikan selagi hangat. Ditemani ice cream vanilla, dessert ini akan tambah enak!


RECIPE IN ENGLISH

Ingredients :

Vegetable oil, for deep frying
1/2 cup sugar
2 teaspoons ground cinnamon
1/2 stick butter
1 cup water
2 teaspoons sugar*
1 cup all-purpose flour
1 orange, zested
1/4 teaspoon freshly grated nutmeg*
4 eggs

Directions :

Fill a deep-fryer or large Dutch oven halfway with vegetable oil and heat to 350 degrees F.

Mix the sugar and cinnamon together in a large shallow bowl, set aside.

Combine the butter, water and sugar in a large saucepan over medium-high heat and bring to a boil. Once it has come to a boil, lower to a medium heat and add the flour, orange zest and nutmeg, stirring constantly until it comes away from the pan and it forms a ball. Transfer dough to a bowl and use an electric mixer to help cool it off. At this point you can whisk in the eggs, 1 at a time, until it becomes a smooth batter. Transfer the mixture into a large piping bag fitted with a large star tip. Working in batches, carefully pipe 4-inch long ribbons directly into the hot oil to fry. Fry until golden, turning if necessary, about 2 to 3 minutes. Remove with tongs and drain on paper towels. Transfer the churros into the sugar/cinnamon mixture and toss to coat. Serve immediately while still warm.

My twist is to serve it with vanilla ice cream! Love it!

Chicken Kiev



BAHAN - BAHAN :
4 potong dada ayam tanpa tulang
1 sdm air jeruk lemon
1/2 cup ( kurleb 8 sdm ) ricotta cheese
1 sdt lada
2 siung bawang putih
2 sdm parsley, cincang
1/4 sdt pala bubuk
2 sdm tepung terigu
cayenne pepper secukupnya
garam, secukupnya
2 cups (kurleb 300gr ) tepung roti putih
2 butir putih telur, kocok
plastik ( yg alus dan bisa melar itu loh )

CARA :

Campur ricotta cheese dengan bawang putih, pala, lada, garam dan setengah dari parsley cincang.Aduk rata, setelah itu bagi menjadi 4 porsi dan bentuk masing - masing melonjong (kira-kira sepanjang 5cm, lalu gulung dengan plastik. Sisihkan ke dalam lemari es supaya agak mengeras, sementara kita siapkan ayam nya.

Pipihkan dada ayam dengan cara dipukul-pukul dengan alat pemuluk daging, lalu lumuri dengan air lemon. Di wadah terpisah, campurkan tepung roti dengan sisa parsley cincang.

Keluarkan campuran ricotta cheese dari lemari es, letakkan masing-masing satu porsi campuran keju di atas (tengah) masing- masing dada ayam, lipat dada ayam (seperti melipat risol ) lalu tusuk dengan tusuk gigi agar tidak lepas. Celupkan dada ayam yang sudah diisi dengan campuran keju, kedalam putih telur lalu lumuri dengan tepung roti. Diamkan di dalam lemari es selama 30 menit. Setelah itu celupkan lagi ke dalam putih telur dan tepung roti.

Panaskan oven 400 F / 204 C. Letakkan dada ayam di atas pinggan tahan panas, panggang selama kurleb 25 menit, atau sampai tepung roti berwarna kecoklatan dan ayam matang.

RECIPE IN ENGLISH.


INGREDIENT :

4 large chicken breasts, boned and skinned
1 tablespoon lemon juice
1/2 cup ricotta cheese
2 clove of garlic
1 teaspoon white pepper
2 tablespoons chopped parsley
1/4 teaspoon freshly grated nutmeg
2 tablespoons all purpose flour
pinch of cayenne pepper
salt, to taste
2 cups fresh white breadcrums ( i use panko breadcrumbs )
2 egg whites, lightly beaten
Plastic wrap

DIRECTIONS :

Mix the cheese with garlic, nutmeg, white pepper, salt half of the chopped parsley. Divide and shape the mixture into four (2 inch long ) rolls with the plactic wrap. chill the mixture rolls in the fridge while preparing the chicken breasts. ( I did this so that the mixture wouldn't melt during the stuffing process )

Beat the chicken gently until flattened and spinkle with lemon juice.

Mix breadcrumbs and the remaining parsley.

Take out the cheese mixture from the fridge and put one portion in the center of each chicken breast and fold the meat over, tucking in the edges to enclose the filling completely. secure the chicken with toothpicks.

Dip the chicken into the egg whites, then coat with the breadcrums mixture. Chill for 30 mins in the fridge, then dip into the egg white and breadcrumbs again.

Preheat the oven to 400 F

Place the chickens on a nonstick baking sheets ( or simply cover your baking sheet with foil . baked in the preheated oven for 25 mins or until the coating is golden brown and the chicken is cooked.

Ayam Bakar Padang ( Padang Grilled Chicken )


1/2 ekor ayam, potong - potong
250ml( 1 kaleng )santan kental
50 ml air
1 batang serai
1 lembar daun kunyit
3 lembar daun jeruk
Garam

Bumbu yang di haluskan :
3 buah kemiri
5 buah bawang merah ( atau satu yang besar )
5 buah bawang putih
2 buah cabe merah
1 ruas jempol jahe
1 ruas jempol lengkoas ( 1 ½ sdt bubuk )
1 ½ sdt bubuk kunyit ( kalo ½ ruas jempol )
1 sdt ketumbar bubuk
1 sdt bubuk kari / rendang ( kalo nga pake jg nga apa apa )

Cara :
1.Tumis bumbu halus dengan minyak goring.
2.Tambahkan daun jeruk, daun kunyit dan serai, tumis sampai harum.
3.Masukkan ayam potong, air ayam akan keluar, masak sampai setengah matang.
4.Campurkan santan dengan air, agar santan tidak terlalu kental.
5.Masukkan santan ke dalam ayam, aduk, tutup dan kecilkan api, sampai kuah berkurang dan ayam matang.
6.Setelah agak dingin, panggang ayam sambil terus di olesi sisa kuah.

:: THE RECIPE IN ENGLISH ::

INGREDIENTS :
1/2 chicken, cut up
250 ml ( 1 can ) coconut milk
50 ml water
1 lemon grass, bruise
1 Turmeric leaf
3 Kaffir Lime leaves
Salt
Vegetable oil

SPICE PASTE ( GRIND OR BLEND ALL TOGETHER ):

3 Candlenuts
5 Shallots ( 1 medium yellow onion )
5 cloves of garlic
2 red chillies
1 1/2 teaspoon mince fresh galangal or powder
1 1/2 teaspoon mince fresh ginger or powder
1 1/2 teaspoon turmeric powder
1 teaspoon coriander powder
1 teaspoon curry powder

DIRECTIONS :

Heat the vegetable oil in a wok,add the spice paste, sautee in moderate heat for few minutes then add the lemon grass, kaffir lime leaves, turmeric leaf, keep stirring until fragrant. place the chicken into the wok and add water, stir well and cover until the chicken is half cooked. pour the coconut milk into the wok while stirring lightly in low heat until the coconut milk reduced by half and dried up.set aside. Preheat grill pan and grill the chicken for 5 mins each side and baste it with the left over sauce.
